Lucky Pub Nachos

Get ready to elevate your nacho game with our latest creation: Lucky Pub Nachos! Perfect for any occasion where you're craving a hearty and flavorful snack. These nachos are loaded with crispy potatoes, gooey cheese, savory bacon, and a sprinkle of green onions for that extra touch. We used Dragon Lips for this recipe but you can choose any of our Lucky Habanero Salsas for this tasty treat!



Serves 6-8

Prep Time: 15 minutes Cook Time: 60 minutes Total Time: 1 hour and 15 minutes


Ingredients:

  • Dragon Lips Lucky Habanero Salsa

  • 3-4 russet potatoes

  • 1-2 cups cheese (white cheddar, yellow cheddar, cheddar jack)

  • 3-4 tablespoons olive oil

  • 1.5 tablespoons paprika

  • 1 tablespoon onion powder

  • 1 tablespoon garlic powder

  • Salt and pepper to taste

  • 1/2 cup chopped green onion (3-4 stalks)

  • 8 oz bacon (about half a pack)

  • Sour cream to serve


Instructions:

  1. Prepare the Bacon: Preheat your oven to 385°F. Line baking sheets with foil or parchment paper and arrange slices of bacon so they are not touching. We twisted our strips - they come out extra crispy! Bake for 15-20 minutes, or until preferred crispiness. Once baked, chop up your bacon into small bite-sized pieces and set aside.

  2. Prepare the Potatoes: Preheat your oven to 400°F. Wash and dry your potatoes, then slice them into 1/4 inch slices. Place them in a large bowl and toss with olive oil, paprika, onion powder, garlic powder, salt, and pepper. Make sure to evenly coat each slice with the seasoning.

  3. Bake the Potatoes: Arrange the seasoned potato slices in a single layer on two baking sheets. Bake for 20 minutes, then flip the potatoes and bake for an additional 20 minutes, or until golden and crispy.

  4. Layer the Nachos: Turn your oven to high broil. In a cast iron skillet or baking dish, layer with the baked potato slices, shredded cheese, chopped bacon, dollops of Lucky Habanero Salsa and green onions. Repeat the layers until all the potatoes are used.

  5. Broil Until Bubbly: Place the skillet or baking dish under the broiler until the cheese is melted and bubbly, about 2-3 minutes.

  6. Serve and Enjoy: Once melted and bubbly, remove the nachos from the oven. Dollop some sour cream and more salsa on top, sprinkle with extra green onions if desired, and serve immediately.
