A Simple, Flavor-Packed Mexican Chicken Soup Caldo de Pollo is a classic Mexican chicken soup known for its rich broth, tender vegetables, and comforting flavor. This version makes it even easier by using a store-bought rotisserie chicken and Lucky Habanero Salsa  to build flavor quickly. Instead of cooking raw chicken from scratch, we add the whole rotisserie chicken directly into the crockpot, allowing the bones to slowly release flavor into the broth while it cooks. The re
