Easy Crockpot Caldo de Pollo with Lucky Habanero Salsa

A Simple, Flavor-Packed Mexican Chicken Soup



Caldo de Pollo is a classic Mexican chicken soup known for its rich broth, tender vegetables, and comforting flavor. This version makes it even easier by using a store-bought rotisserie chicken and Lucky Habanero Salsa to build flavor quickly.

Instead of cooking raw chicken from scratch, we add the whole rotisserie chicken directly into the crockpot, allowing the bones to slowly release flavor into the broth while it cooks.

The result is a hearty soup that tastes like it simmered all day - but requires very little prep.

Ingredients

• 1 whole rotisserie chicken

• 6 cups chicken broth

• ½ tub Lucky Habanero Salsa (Medium or Original Hot)

• 4 whole ears of corn, halved

• 3 carrots, sliced

• 2 celery stalks, chopped

• ½ yellow onion, chopped

• 2 medium potatoes, diced

• 1 zucchini, sliced

• 1 tsp cumin

• 1 tsp oregano

• Salt and pepper to taste

• Juice of 1 lime


Optional toppings

• chopped cilantro

• sliced avocado

• lime wedges

• warm tortillas

Instructions

1. Add Ingredients to Crockpot

Place the whole rotisserie chicken in the crockpot.

Add the chicken broth and ½ tub of Lucky Habanero Salsa.

Add the corn, carrots, celery, onion, garlic, and potatoes.

2. Season

Sprinkle in cumin, oregano, salt, and pepper.

3. Cook

Cover and cook:

Low: 6–7 hours High: 3–4 hours

Cooking the chicken whole allows the bones to release extra flavor into the broth as the vegetables become tender.

4. Shred the Chicken

About 30 minutes before serving, remove the chicken from the crockpot. Shred the meat and discard the bones and skin.

Return the shredded chicken to the soup.

5. Finish the Soup

Stir in fresh lime juice and adjust salt and pepper to taste.

Serve

Ladle the caldo into bowls and top with:

• fresh cilantro

• avocado slices

• extra lime juice


Serve with warm tortillas or our Lucky Habanero Rice for a comforting, satisfying meal.
