A Bold Twist on the Classic French Vegetable Dish
Ratatouille is a beautiful vegetable dish that celebrates fresh ingredients and simple cooking. Traditionally made with eggplant, zucchini, and tomatoes layered over a rich tomato sauce, this recipe gives the classic French dish a flavorful upgrade.
Instead of crushed tomatoes, we use Lucky Habanero Salsa, which already contains roasted chilies, vegetables, and spices—bringing deeper flavor and just the right amount of heat to this colorful dish.
The result is a vibrant, comforting recipe that works as a side dish or a full vegetarian meal.
Ingredients
For the Sauce
2 tbsp olive oil
½ small onion, chopped
3–4 garlic cloves, minced
⅓ cup shredded carrot
1 tub Lucky Habanero Salsa (Medium or Original Hot)
2 tsp dried basil
½ tsp dried parsley
Salt and black pepper to taste
For the Vegetable Layer
1 small eggplant, sliced into thin rounds
2 small zucchini, sliced into thin rounds
3 Roma tomatoes, sliced into thin rounds
2 tbsp olive oil
Salt and pepper to taste
Instructions
1. Preheat the Oven
Preheat your oven to 375°F.
2. Make the Sauce
Heat 2 tablespoons olive oil in a skillet over medium heat. Add the onion, garlic, and shredded carrot and cook until tender, about 5 minutes.
Stir in the Lucky Habanero Salsa, dried basil, and parsley. Let the sauce simmer for 10–15 minutes until it thickens slightly. Season with salt and pepper to taste.
3. Prepare the Baking Dish
Spread the sauce evenly into the bottom of a 2-quart baking dish.
4. Arrange the Vegetables
Layer the eggplant, zucchini, and tomato slices upright in a circular pattern over the sauce. Alternating the vegetables creates the classic ratatouille look.
5. Season
Drizzle the vegetables with olive oil and sprinkle with salt and pepper.
6. Bake
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake another 10–15 minutes, until the vegetables are tender and slightly caramelized.
